Learning to surf (Kauai): It's not complete to visit Hawaii without learning how to conquer the waves and believe me, it's not that hard. On Kauai, you can learn at the Margo Oberg Surf School, and within 2 hours, you will be able to surf quite comfortably.
Observing Hawaii from above (Big Island and Kauai): With the introduction of modern aviation machineries into Hawaii, we can finally enjoy the breathtaking view of all the Hawaiian islands conveniently from above. Aboard a helicopter, you will be able to see different perspective of Hawaii from above. In addition, you will be able to access parts of the islands such as isolated mountain peaks and rumbling volcanoes that can not be easily reached via land.
